I have been brewing water kefir and kombucha for two years now but this quest made me actually research what is happening at the microbial level. The life in a jar of brine or a crock of fermenting cabbage is real. It is ancient. Your hands introduce something of yourself into whatever you tend, and in return, those small living things tend you. This is one of the oldest ways a person and the earth have known each other.
